Georgian-Style Bull Testicles

Make an appetizing, out-of-the-ordinary dish—your friends will be amazed! It's simple to cook, and this delicacy comes out wonderfully tender and delicious. The main thing is finding bull testicles (also called calf fries or Rocky Mountain oysters) for sale, since they aren't popular everywhere and many people don't even realize you can eat them—or how good they are. We used to try this dish only at Caucasian cafés, and now we make it ourselves at home!

    1. Wash the testicles well, then soak them for 2 hours in salted water. 2. When the time is up, drop them into boiling water and cook for 7–10 minutes. 3. Meanwhile, peel the onion and garlic. Slice the onion into half-moons and mince the garlic. 4. Take the testicles out of the water, let them cool slightly, peel off the outer membrane, then cut them lengthwise into pieces. 5. Heat the vegetable oil in a skillet, add the pieces, and fry over high heat for 5–7 minutes, then lower the heat. 6. Add the onion and cook another 5–7 minutes. 7. Add the ground coriander, paprika, and nutmeg. Season with salt. 8. Pour in the wine and soy sauce. 9. Add the minced garlic and the whole chili. 10. Mix everything well and simmer 7–10 minutes (until the liquid cooks off). Serve with fresh herbs and your favorite side and sauce. Enjoy!
