Tasty, filling sandwiches in a flash! I don't know about you, but I really hate cooking in the morning — there's no time or energy for anything fussy. That's why these quick toasts are always a hit at our house. There's no better breakfast, and they make a great after-work snack, too.

  • Start by frying the bread on both sides. Be sure to get the pan good and hot and fry the slices over high heat — that way the bread browns fast but stays soft inside. You can use any oil for these toasts, but I always reach for olive oil; it makes them more tender and you can just about taste it.
  • Set the bread on a plate, cover each slice with cheese, and let it cool a bit. Now seed the bell pepper and dice it small along with the tomato — go for firmer tomatoes, or scoop out the seeds. Lightly salt the chopped vegetables, stir them together with the tomato sauce, pile them onto the bread, and microwave until the cheese melts. If you like, these toasts are great alongside an omelet or a bowl of soup. A simple recipe, but a really tasty one.
