- This recipe is for anyone who loves genuine Central Asian cooking. Zhumshak-et is a dish from Kyrgyzstan, where lamb and its offal are cooked with real enthusiasm. Let's make it together. Start with the filling. Rinse the lamb and trim away any membrane and sinew, then cut it into the smallest pieces you can. Finely chop the onion, green onion, and fat-tail fat. Combine everything, then lightly parboil the rice and add it to the filling too. Pour the vinegar over the mixture and let it marinate for a couple of hours. While the filling marinates, take the rest of the lamb, rinse and trim it the same way, and cut it into 4 pieces. Pound each piece thin with a mallet, then season with salt and pepper. Place a portion of the filling in the center of each cutlet and fold the edges over to form a roll — try to keep the filling fully wrapped in meat. You can tie each roll with kitchen twine to hold its shape. Dredge each roll in flour and fry in a skillet with hot fat, then transfer them to the oven to finish cooking through. While the meat bakes, cut the bell pepper and radish into thin sticks and lightly sauté in vegetable oil, then stir in the tomato paste and garlic. Simmer this mixture, stirring, for another 5–7 minutes. Separately, quick-pickle some onion with the sugar, salt, and vinegar. Serve the zhumshak-et with the sautéed vegetables, pickled onion, and green peas.
