  1. Step 1:

    Wash the zucchini and trim off the stem and tip. Coarsely grate the zucchini.

    Add ¾ teaspoon of salt and stir. Let it sit for 10–15 minutes so the zucchini releases its juice.

    Meanwhile, cut the cheese and ham into small cubes.

    Add the cheese, ham, chopped parsley, and pressed garlic to the zucchini in the bowl.

    Stir in the flour and season with pepper to taste. Mix everything together.

    Heat a little oil in a skillet. Spoon in the batter and fry on both sides until golden, about 1.5 minutes per side.
