Etymologically, the Russian name of the plant comes from the word for "pasture." The healing properties of fenugreek have been known since ancient times. The Egyptians and Greeks used it as a vegetable, and the seeds were used in embalming mummies. Medicinally it was used as a remedy for baldness. The plant was used to ease childbirth and boost lactation. Fenugreek tea helps with stomach cramps. The plant lowers blood sugar levels and is used externally for skin inflammation. The seeds were used as a spice. The homeland of fenugreek is Lebanon and Syria. The plant is cultivated almost everywhere. The most common name for fenugreek as a spice is shambhala. The leaves and tender stems are used for food, and green cheese is made from the dried plant. The spice has a nutty flavor. Its content is high in curry (15–20%) and chutney. Fenugreek is added to the dough when baking bread and to marinades. Coffee is made from the seeds, and salad from the young plants. The mucilage obtained from the seeds is used in the textile and pharmaceutical industries — bactericidal plasters are made from it, and colds are treated with it. The seeds are very hard to grind at home, so the spice can be bought in the store in powder form. However, keep in mind that the powder is slightly bitter, so it's recommended to use freshly ground seeds. Before use, they should be toasted in a dry pan so they don't redden, otherwise they'll turn bitter.
