  • Peel the garlic and carrot. Cut the half carrot into thin matchsticks and slice the garlic cloves the same way. Prepare the pork leg for roasting: make slits all over the surface of the piece and carefully tuck a piece of carrot and garlic into each one. Then rub the meat all over with salt, black pepper, khmeli-suneli, and mustard. Set it in a greased baking dish — or, instead of oil, lay the meat on a few strips of fatback, which will make the roast even browner and tastier. Cover with foil and place in a well-preheated oven. After 20 minutes, remove the foil. If the meat has given off little juice, add a splash of hot water. Baste the pork with its juices as it roasts to keep it from drying out. Total roasting time is about an hour. Let the finished roast cool, then slice and serve. Enjoy!
