- For some reason I've never cared for sauerkraut as it is, but I love turning it into a hot dish. I really recommend making oven-braised sauerkraut with mushrooms and sauce this way. I've loved the flavor pairing of cabbage and mushrooms since childhood, so this is a favorite of mine — and it takes hardly any time. Rinse the dried mushrooms and cover them with water so they can swell. Once plumped, simmer them in that same liquid. Lift out the cooked mushrooms and cut them into small pieces. Squeeze the sauerkraut to remove the juice, put it in a baking dish, and pour in the mushroom broth. Cut the peeled onion into half-moons. Peel the washed carrot and cut it into half-rounds. In a skillet with vegetable oil, fry the onion, carrot, and chopped mushrooms. Add the mixture to the dish with the cabbage, along with the spices and salt. Put the dish into an oven preheated to 300°F (150°C) and keep it there until the cabbage turns soft. To finish, make a béchamel sauce: combine the butter and flour, stir well, then add the milk, spices, and salt. Pour the sauce over the cabbage and bake for another 15 minutes. Serve the dish hot.
