Green Bean Lobio
Green bean lobio—quick, simple, tasty, and fragrant. Let's get to know a beloved dish of Georgian cuisine: lobio made with green beans. Try it once and you'll want it on your regular menu. You can swap the green beans for dried beans; just soak them ahead of time. Lobio is loaded with spices and fresh herbs and, like many Caucasian dishes, walnuts—which is what makes it so aromatic, appetizing, and wholesome. Serve it as a hot dish or an appetizer, or use it as a side for meat.

Step 1:
For an authentic Georgian lobio, gather green beans (fresh or frozen), tomatoes, sweet peppers (and hot pepper if you like), onion, walnuts, fresh herbs—parsley, cilantro, basil—and spices: khmeli-suneli (a Georgian herb blend) is a must, plus paprika, cumin, coriander, ground black pepper, whole peppercorns, and thyme.

Step 2:
The key is to prep all the vegetables first. This dish is quick and easy, so start by washing, trimming, and cutting everything so you can add it in order. Trim the ends off the green beans and cut them into 3/4-inch (1.5–2 cm) pieces. Bring water to a boil and drop in the beans—don't salt them. Cook until tender, 7–10 minutes, depending on the beans.

Step 3:
Cut the pepper and onion into medium pieces and finely chop the herbs. Smash the garlic with the flat of a knife, peel it, and mince it fine.

Step 4:
Score an X in the skin of the tomato and blanch it in boiling water for about 2 minutes. An easy trick: just dip it into the pot where the beans are boiling. Peel the tomato and cut it into slices.

Step 5:
In the hot oil, lightly sauté the onion until translucent, then add the pepper. Cook for about 5 minutes.

Add the beans and the prepared tomato. Stir and cook for about 3 minutes. Add the herbs and garlic. Season with salt.

Season with the spices—what a shame I can't share the aroma coming off this blend! It's simply incredible. Simmer everything together for 5–7 minutes. At the end, fold in walnuts, ground or crushed in a mortar.

Step 8:
Serve the lobio with fresh herbs, either hot or chilled—it's delicious either way. It also makes a great side for meat.
