Strawberry Mousse
A delightful summer dessert worth the time. There are loads of different strawberry mousse versions out there. Depending on the method and the ingredients, the dessert comes out more or less delicate. Recently I made a mousse based on semolina — I'll post that recipe on the site soon. This version is with whipped cream and gelatin. It's the most delicate mousse I've tried. It's very much like panna cotta in texture — which, in principle, is exactly what it is, just with fragrant strawberry purée added.
Cooking method

Step 1:
Get the ingredients ready. To make strawberry mousse you'll need: ripe, juicy, fragrant strawberries, cream (33% fat or higher / heavy whipping cream), gelatin (mine is powdered), water, and powdered sugar.

Cover the gelatin with water. Leave it to swell for 10 to 15 minutes.

Wash the strawberries and hull them.

Purée the strawberries in a blender.

If you like, push the purée through a sieve to remove the little seeds.

Whip the chilled cream to stiff, stable peaks, gradually adding the powdered sugar.

Fold the strawberry purée into the whipped cream a bit at a time.

Mix until smooth.

Step 9:
Pour in the dissolved gelatin and mix again with a mixer on low speed.

Step 10:
Divide the strawberry mousse among dessert glasses and refrigerate for 3 to 4 hours. Before serving, garnish the dessert with strawberries and mint. Enjoy!

This strawberry mousse recipe is very versatile and simple — and its simplicity is probably its main advantage. You can make it by pouring it into small glasses and topping it with fresh berries, as done here. But this recipe will also come in handy when you want to make a simple no-bake pie or a big mousse cake. It's also great as a layer in multi-tiered cakes.
