Cottage cheese cake with blueberries with pastries

And if it includes such wonderful products as yogurt and blueberries, the benefits of such a dessert are twofold. This is a delicacy of English cuisine, where they generally like to cook desserts from fresh fruits and berries. This culinary recipe requires a long time to freeze the cake, so you should prepare the dish the night before (this is a cake without baking).

Cooking method

Soak gelatin in cold water. We pass cookies through a large meat grinder and mix the resulting crumbs with melted butter. We take a detachable mold, line the bottom with parchment and put cookies with butter in an even layer. We put the form in the refrigerator for two hours. Whisk the blueberries in a blender. We rub the cottage cheese with sugar and add yogurt. In a water bath, we warm up the gelatin and introduce it into the curd mass. Here we also put half of the blueberry puree and pour in lemon juice. We send it to cool in the refrigerator for half an hour. Beat the cooled proteins at high speed and cream in a separate bowl. Carefully put the cream in the blueberry-curd mixture, mix in the whipped whites. We put the resulting souffle on a sponge cake, carefully smear the second part of blueberry puree on top. And we put it in the refrigerator for the whole night. In the morning, we release the cake from the mold and decorate it with roasted almonds.
