Cooking method
1. We put the dates in a bowl, pour hot water. Leave for half an hour to soften the dates.
2. After the specified time, grind the dates in a blender. If there were bones in them, then they must first be cleaned.
3. Then add almonds and coconut chips to the resulting mass, continue to grind.
4. As a result, the finished mass should become sticky. Nuts do not have to be crushed into powder. Pieces of chopped almonds are welcome.
5. The bottom of the split mold is lined with parchment, spread the resulting mass on it. We distribute it with our hands in an even layer. We tamp it well.
6. We send the form with the base to the refrigerator, and in the meantime we will continue cooking.
7. Cashew nuts should be pre-soaked in water and left overnight. And just before the preparation of the white layer, we drain the water from them. Re-wash the cashews in clean water.
8. Put the cashews in the blender bowl, grind to a pasty consistency.
9. Then we send the rest of the ingredients here: cream cheese, maple syrup and vanilla. Whisk for a couple of minutes at low speed.
10. At the very end, add coconut oil, whisk again. It turns out a delicate creamy mass.
11. We spread the resulting mass on the base, level it. We return the form back to the freezer for half an hour.
12. Kiwi peel. We leave two fruits, and cut the rest into cubes. We put the chopped kiwis in the bowl of a blender. Here we pour most of the water (100 ml). Grind the kiwi until smooth.
13. Pour gelatin into a bowl, heat the remaining water in a microwave oven. Fill it with gelatin, let it completely dissolve.
14. Then pour the dissolved gelatin into a container with crushed kiwi, mix. Pour the resulting mass on a white layer of cheesecake.
15. The remaining whole kiwis are cut into slices. We spread them on the surface of the cheesecake. We send it to the freezer until it freezes completely. For about 2-3 hours.
16. We take the finished cheesecake out of the freezer, very carefully draw a knife along the sides of the mold. Then carefully extract the delicacy.
