I pulled off a strawberry cheesecake recipe from a friend at work, she does this very often in June.
Gelatin should be soaked in cold water (80 mlgr) and left to swell. Strawberry juice is perfect.
We put cookies in a blender (you can take Sugar or Anniversary cookies) and grind them into grits. Mix with softened butter. And we put it in a round shape in the form of a basket with sides.
We put whole strawberries on the cookie basket (you can also put halves).
Separately, whisk the heavy cream with powdered sugar, add melted and slightly cooled gelatin to them, put mascarpone. Mix everything carefully.
And we put everything on strawberries. We put it in the refrigerator overnight, take it out in the morning and eat a very delicious
strawberry cheesecake
.
It can also be decorated with strawberries on top.
