Real Italian pizza is prepared on the basis of thin tortillas, and together with the glorified cheese and meaty tomatoes do not need additional wetting. Eating pizza with various sauces is most likely an invention of the Americans, their pizza dough is thicker and, accordingly, drier.
But if you do not adhere to traditions and love pizza with sauce, use this recipe. I'm preparing one for the arrival of guests.
Pizza sauce is based on red sauce. To get the main ingredient, heat the boiled tomato puree, add allspice and finely chopped garlic, boil and filter. In a water bath, heat the sauce and melt a piece of butter, mix well.
Chop parsley, celery, grind cloves. Finely chop the onion. We put all these fragrant seasonings in a saucepan, pour in grape wine and boil under the lid until 2/3 of the liquid remains. Mix the wine with spices and red sauce, pour in the nutmeg, pour in the broth and boil everything for about 20 minutes on low heat. Three minutes before the end of cooking, salt, a little pepper.
Served in saucers with hot pizza.
