Classic Beef Shurpa on the Stove

Make the signature dish of Uzbek cuisine! Here's a recipe for a very tasty first course called shurpa, which my husband taught me to make. Shurpa is a campfire soup cooked out in the field, but you can make it just as successfully in a city kitchen. What makes this dish special is that all the ingredients are cut very large — that gives the shurpa its particular charm. :)

    1. Pour cold water into a pot, add the washed pieces of bone-in meat (cut the meat into large chunks) and a bay leaf, and cook for an hour and a half from the moment it boils, skimming the foam off the surface of the broth now and then.
    1. Peel and wash the potatoes (small ones are best) and carrots. We won't cut the potatoes, but we'll cut the carrots lengthwise into 4 pieces. Peel the onion and cut it into large cubes. Remove the seed pod from the pepper, wash it, and cut it lengthwise into a couple of pieces. Score the tomatoes crosswise and pour boiling water over them, then peel off the skin (after that it comes off easily) and cut the flesh into large wedges.
    1. Add the prepared ingredients (except the tomatoes) to the broth and cook for 20 minutes, then add the tomatoes and cook for another 5 minutes. Now season the fragrant dish with salt and pepper to taste, and add ground paprika.
  • Let the dish rest, covered, for 10–15 minutes, ladle it into bowls, and add fresh parsley to each. That's it — time to eat. :)
