"Breeze" Pineapple, Chicken, and Corn Salad

The pairing of chicken and pineapple is so refreshing and original! This salad is fittingly called "Breeze." All the ingredients are light, and it's moderate in calories — and very tasty. The gentle sweetness of everything in it makes it feel festive. As they say, food should be not only nourishing but beautiful, too, and this salad is full of color thanks to the yellow corn, red bell pepper, and pineapple.

  • How do you make this "Breeze" pineapple, chicken, and corn salad? Start with the chicken breast — boil it in a separate pot. I like the meat very tender, almost falling apart. Once it's cooked, cut it into small pieces. Cut the pineapple into cubes; canned pineapple is handy since it usually comes already cubed. Cut the bell pepper into cubes too — red bell pepper is nice for color. Combine all the ingredients above, then add the corn. Stir a little curry powder into the mayonnaise for a flavor kick, and add some ground white pepper if you like. Mix everything and dress the salad with the mayonnaise. Serve it on a bed of Napa cabbage leaves. Enjoy!
