  • Roast the beet ahead of time — it keeps more of its vitamins and vivid color that way, though you can boil it if you prefer; it's up to you. Start the vinaigrette with the beet: cut it into cubes, put it in a salad bowl, and add the mustard and vinegar. Let it marinate while you peel the carrot and cut it into cubes too. Put the carrot in a small saucepan, cover with about a cup of water, and set it to cook. Once it boils, time 10 minutes, then add the peas and cook 2 minutes more. Drain, and add the carrot and peas to the beet — no need to cool them. While the carrot cooks (it's quick), prep the rest of the vegetables: slice the corn into rounds, dice the cucumbers, and finely chop the onion. Add them all to the bowl after the carrot. Mix well, then add the seasonings and oil. The vinaigrette is almost ready — you could eat it right away, but for the best flavor, chill it in the fridge for 3–4 hours so it can soak.
