Grape Cluster Salad
Try this layered fruit-and-meat salad and you'll be back for seconds! With its clever presentation, "Grape Cluster" salad makes a worthy centerpiece for a holiday table. You'll love the interesting flavor pairings — chicken with walnuts, apple, and grapes. Use dark or light grapes as you prefer; seedless is best, but if you can't find any, remove the seeds. There are several ways to make it — without the apple, with napa cabbage, with other nuts — pick whichever you like.
Cooking method
-
Step 1:
How do you make Grape Cluster salad? Here are the ingredients. Boil the chicken breast and eggs ahead of time.
-
Step 2:
Finely chop the walnuts with a knife. Finely chop the chicken breast.
-
Step 3:
Grate the eggs and any hard cheese on the coarse side of a box grater.
-
Step 4:
Cut the grapes in half, removing the seeds if your variety has them. Grate the apple on the coarse side of a box grater.
-
Step 5:
Assemble the salad. An oval dish is best so the cluster comes out elongated (mine is round). First layer: chicken breast, spread with mayonnaise.
-
Step 6:
Second layer: sprinkle with half the walnuts.
-
Step 7:
Third layer: eggs, spread with mayonnaise.
-
Step 8:
Fourth layer: apple.
-
Step 9:
Fifth layer: hard cheese, spread with mayonnaise.
-
Step 10:
Sixth layer: sprinkle with the rest of the walnuts.
-
Step 11:
Seventh layer: arrange the grape halves on top.
-
Step 12:
Garnish with parsley leaves and add a grape stem for effect. The Grape Cluster salad is ready — enjoy!
- You can garnish with lettuce leaves instead of parsley.
- Homemade mayonnaise is worth the effort — tastier and more wholesome. You can also use sour cream or plain yogurt instead, on their own or mixed in to your taste, which lightens the dish.
- How do you hard-boil eggs? To keep the shells from cracking, start them in cold water over low heat. Boil for 9 minutes after the water comes to a boil, then transfer to cold water to cool — the sudden temperature change makes them easier to peel.
