Layered Salad with Soft Cheese, Cucumber, Tomato, Chicken, Peas, and Egg

You can layer it or just toss everything together — layered makes it party-worthy, tossed keeps it casual. A fast, hearty, and delicious dinner!

    How do you make this layered salad with soft cheese, cucumber, tomato, chicken, peas, and egg? Hard-boil the egg ahead of time. Wash the vegetables and pat them dry with paper towels. Use whatever cheese you like — hard, soft, semi-hard, even processed. If it's a softer cheese, freeze it briefly so it's easier to grate. Cut the smoked chicken into small pieces.

    Take a flat serving plate, set a ring mold on it, and start building your layers. For the first layer, spread half the chicken and brush it with a thin coat of mayonnaise. I use a silicone brush for this.

    Cut the fresh cucumber into matchsticks. I left the peel on; if yours is tough or bitter, go ahead and peel it. Layer the cucumber over the chicken.

    After each layer, I pressed down and leveled it with a lid from the mold. Squeeze a little mayonnaise over the cucumber and spread it across the surface.

    Finely chop or grate the cheese. Spread half of it over the cucumber layer and brush with mayonnaise.

    Grate or finely chop the peeled egg. Layer it over the cheese and smooth it out.

    Squeeze mayonnaise onto the egg and spread it into a thin layer.

    Measure out the green peas, draining off the liquid.

    Slice the tomato thin. You can skip this step — I added tomato just to bring a little color to the salad.

    Scatter the peas over the egg, then arrange the tomatoes on top. Brush the tomatoes with a layer of mayonnaise.

    Spread the second half of the chicken over the tomatoes. Level the layers, pressing down with the lid from the mold, and brush the chicken with mayonnaise.

    Finely chop the green onion and sprinkle it over the salad.

    Top the salad with the remaining finely chopped cheese. Your smoked-chicken salad is ready!

  • If you want to add cooked vegetables, boil them ahead of time so you're not waiting around. Feel free to build on the basic ingredients with whatever you like — just don't overdo the spicy stuff. You can change up the cut, too: matchsticks or cubes both work, and cutting everything to the same size actually makes the salad taste better. Next time I'll make this with sour cream — mayonnaise is high in calories and adds a sharper note to the finished dish.
  • It's worth making your own mayonnaise — it's tastier and better for you. (There are some great homemade mayonnaise recipes to try.) You can also dress this with sour cream or plain yogurt instead of mayonnaise, or blend them with mayonnaise in any ratio you like to cut the calories.
