"Beloved Husband" Salad with Smoked Chicken

This is a very simple yet delicious salad. Hearty and tasty, it easily stands in for a main course. You can also leave it in the fridge overnight to let the flavors meld, then decorate it just before your guests arrive. The time given doesn't include the chilling. Enjoy!

    Gather the ingredients.

    Cut the mushrooms into thin slices. Put them in a hot, dry skillet and cook for 5–10 minutes without oil. The mushrooms will release their juices at first, but it'll all cook off within 10 minutes. Salt the mushrooms and add a little vegetable oil. Finely chop the onion, add it to the mushrooms, and sauté briefly. Then transfer everything to a plate and let it cool a little.

    Cut the chicken into small cubes. Hard-boil the eggs. Grate the eggs and processed cheese on the coarse side of a grater. Mix with the mayonnaise.

    Layer the salad on a plate or in a bowl. The first layer is the mushrooms.
