Classic Olivier Salad with Beef and Pickles
This is the ultimate holiday salad—give it a try and see for yourself! Everyone has their own take on Olivier, both in the ingredients and the proportions. Today I want to share a classic version made with beef. To my taste, the beef is what makes this one of the most delicious variations of all.

- Start by boiling the beef—it usually takes about an hour to become tender. 2. Wash the potatoes and carrots well, then boil them. 3. Hard-boil the eggs in a separate pot. 4. Peel the cooked vegetables and the eggs. 5. Cut the beef into small pieces. 6. Cut the potatoes, carrots, and eggs into medium pieces, keeping them roughly the same size. 7. Finely chop the onion, pour boiling water over it, then drain—this takes the sharp bite out. 8. Dice the pickled cucumbers. 9. Combine all the chopped ingredients and stir in the drained green peas. 10. Season with salt. 11. Fold in the mayonnaise. Your Olivier is ready—enjoy!
