Classic Olivier Salad with Beef and Pickles

    1. Start by boiling the beef—it usually takes about an hour to become tender. 2. Wash the potatoes and carrots well, then boil them. 3. Hard-boil the eggs in a separate pot. 4. Peel the cooked vegetables and the eggs. 5. Cut the beef into small pieces. 6. Cut the potatoes, carrots, and eggs into medium pieces, keeping them roughly the same size. 7. Finely chop the onion, pour boiling water over it, then drain—this takes the sharp bite out. 8. Dice the pickled cucumbers. 9. Combine all the chopped ingredients and stir in the drained green peas. 10. Season with salt. 11. Fold in the mayonnaise. Your Olivier is ready—enjoy!
