  • Potato chips, whether store-bought or homemade, are tastiest with a dip. Everyone has their favorite — tomato, cheese, or barbecue — but there's one dip that no one can resist: onion dip. It doesn't taste as sharp as it sounds — a mild, appetizing aroma, just the right richness, and best of all, a completely natural product with no foreign additives. The base of onion dip is sour cream. It should be thick and rich enough; 25% fat is best. Put the sour cream in a deep bowl and add the main secret that gives it the flavor it's named for: dried onion, of course. The easiest way is to buy it at the store in the seasoning aisle — but make sure it's actual dried onion, not the powder, which is already used in this recipe. If you can't find ready-made dried onion, you can make your own. Cut the peeled onion into small cubes, separate the pieces with your hands, and dry them in a dehydrator or oven at no more than 80°C. The onion is fully done when it's dry to the touch and no longer sticks to the tray. Add the dried onion to the sour cream, then the onion powder and garlic powder. Mix the dry ingredients into the sour cream until smooth. The dip needs salt, but go easy on it — the chips are already salty, and if you overdo it the overall flavor will come out too sharp. Add a little salt, mix, taste it together with the chips, and only then add more if needed. You can use fresh or dried parsley. Wash, dry, and finely chop the fresh kind. Add the herbs to the dip and stir. If you like, you can add any dried herbs at this point to vary the flavor. Cover the finished dip and refrigerate it for an hour so the flavors and aromas come together. Serve with potato chips. Enjoy!
