Classic Layered Cod Liver Salad
A luxurious layered salad with cod liver. I'm a big fan of cod liver for its extraordinary, one-of-a-kind flavor — though because it's so rich, I don't treat myself to it too often. This is one of my favorite salads, and I use the liver from two cans instead of one — it just tastes better that way. The main secret is to grate the ingredients on the fine side of a grater. That's what makes the salad tender and light.

- Boil and peel the carrots. Grate them on the fine side of a grater.
- Hard-boil the eggs and peel them. Separate the whites from the yolks and grate each separately on a fine grater.
- Grate the cheese on a fine grater.
- Mash the cod liver with a fork.
- Build the layers in a salad bowl: cod liver – carrots – mayonnaise – egg whites – cheese – mayonnaise – egg yolks.
- Refrigerate for 1 hour to let the flavors meld.
- To garnish: halve a few olives lengthwise and slice the rest into rounds. Wash and dry the parsley.
- Garnish the salad with the olives and parsley and serve.
