Spicy Marinated Mackerel
Wonderfully tasty, juicy, and seriously appetizing fish! If you have the time, it's definitely better to marinate mackerel yourself, adding salt and spices to your own taste. For one, it's cheaper than the store-bought stuff, and for another, it's far more delicious. Look for fresh or just-thawed fish that's firm to the touch. For a little tartness, you can add a splash of lemon juice to the marinade. Be sure to give this mackerel a try — it's really good!

- Rinse the fish; if it's frozen, thaw it first. Clean out the insides and use a sharp knife to cut off the fins, head, and tail. Scrape the belly cavity very thoroughly to remove the black membrane. Cut the fish into pieces. 2. Set a saucepan over the heat, pour in the water, bring it to a boil, and add the spices and sugar. Taste and add salt to your liking. Simmer the marinade for five minutes, let it cool, then stir in the vinegar and let it steep — the flavor will deepen. (Khmeli-suneli is a Georgian spice blend; you'll find it with the international seasonings.) 3. Transfer the fish to a deep dish and pour the slightly cooled marinade over it. Put it somewhere cold for about 5 hours, or leave it overnight — by morning the fish will be ready!
