Classic Meat Lasagna

- To make the Bolognese sauce, you'll need ground pork: rinse the meat, cut it into pieces, and run it through a meat grinder.
- Peel the onion, garlic, and carrots, rinse them, and cut into small dice. Sauté the vegetables in olive oil until soft, then add finely chopped bacon and cook another 2 minutes.
- Add the ground pork to the pan, break it up with a fork, mix it with the vegetables and bacon, and pour in the wine.
- Cook until the alcohol has fully cooked off, then add the tomato paste, season with salt, pour in the broth (or water), and simmer over low heat for one hour.
- Melt the butter in a saucepan over low heat. Add the flour and stir, then take it off the heat and pour in the milk a little at a time, whisking so no lumps form (I still ended up with a few lumps and had to strain the sauce through a sieve to get rid of them). Return the sauce to the heat, bring to a boil, add salt and ground nutmeg, and cook until thickened.
- Choose a baking dish of the right size, spread a little béchamel over the bottom, lay down lasagna sheets, spread on the Bolognese, and pour over white sauce. Build up the whole lasagna this way and finish by sprinkling the top with grated Parmesan.
- Bake in an oven preheated to 350°F (180°C) for 30 minutes.
- Call everyone to the table—dinner's ready!
