Green Soup with Sorrel and Turkey

Cooking method

    This is my all-time favorite soup. I could eat it for breakfast, lunch, and dinner, 7 days a week! It's best made with chicken, turkey, or beef. I've also made it meatless and it's delicious that way too. When I made it, the only meat I had was ground turkey, so I'm making it with meatballs.

    Rinse the meat; if using chicken, remove the skin to keep the soup lean, cut into serving pieces, and put it on to cook. If you're using ground meat like I am, season it to taste and add 1 egg. Mix well and roll into balls about 1 inch (2–3 cm) across. Pour water into the soup pot, bring it to a boil, and drop in the meatballs.

    Chop the vegetables and herbs. I like to cut everything into thin strips — it just tastes better to me that way. Cut them however you like: julienned, diced, or in wedges.

    Don't forget to skim the foam off the meat. Add a bay leaf and some peppercorns. Once the meat is cooked, add the potatoes, carrot, and onion. I add a little green onion to the regular onion — it looks pretty in the soup.

    When the potatoes are tender, add the tomatoes and bell pepper. Separately, hard-boil the eggs. To make them easy to peel, add 1 tablespoon of salt to the water, and run them under cold water as soon as they're done.

    After 15 minutes, add the sorrel and herbs. Cook for 7 minutes.

    Add the eggs and salt to taste. Let it simmer for 5 minutes.

    Always eat it with sour cream and fresh herbs! SOOO DELICIOUS!!! Enjoy!

  • You don't have to add the eggs to the pot — you can put them right in the bowl before eating. I don't fuss over it; sometimes I'm too lazy to boil eggs later, or there aren't any left... Besides, once the soup has had time to sit, it's even tastier with the eggs!
