Vietnamese Pho Ga (Chicken Pho)

    1. Brown the beef ribs in hot vegetable oil. 2. Cut the vegetables — onion, carrot, and ginger — into sticks, and brown them as well. 3. Transfer the browned ribs and vegetables to a pot and cover with cold water. Bring to a boil. Skim off the foam and season with salt. Add the spices and simmer for 3 hours. 4. Brown the chicken fillet and cut it into bite-size pieces. 5. Cook the rice noodles and rinse in cold water. 6. Strain the broth through a sieve. 7. Divide the rice noodles among bowls and ladle in the broth. Top with the chicken pieces and sprinkle with cilantro. For garnish, use lime wedges, chili, and green onion. Come to the table!
