Lamb and Chickpea Shurpa

Give this Uzbek classic a try — it's incredibly tasty and aromatic! I discovered Uzbek food fairly recently, but I've already fallen for it! The flavors are bold and the dishes are full of character. Today I want to show you how to make Uzbek shurpa with chickpeas. Cook along with me!

  • If you plan to cook in the morning, soak the chickpeas the night before (chickpeas need to soak at least 4–5 hours before cooking, but overnight is best).
  • Rinse the lamb, place it in a pot, cover with cold water, and boil for 15 minutes once it comes to a boil. Then add the chickpeas and the whole chili peppers and cook for an hour.
  • Peel the onion, slice it into thin half-rings, add it to the broth, season with salt, and cook for about another hour (by which point the meat should be well cooked and tender).
  • Peel, rinse, and cut the carrots and potatoes: the carrots into thick rounds, the potatoes into quarters. Add the vegetables to the soup half an hour before it's done.
  • Wash the bell pepper, remove the seeds, cut it into large squares, and add it to the shurpa about 20 minutes before the end.
  • Rinse the tomatoes and chop them small (I dice them — it looks nicer). Peel the garlic and press it through a garlic press. Five minutes before turning off the heat, add the tomatoes and garlic paste to the shurpa and season with cumin, coriander, and red pepper.
  • Wash the herbs, chop them finely, and add them to the pot.
  • Let the dish rest, covered, for 15 minutes, then ladle the shurpa into bowls.
