Tomato Juice in Jars

Put up some delicious vegetable juice for winter with this recipe—it's a breeze! I've loved homemade tomato juice since childhood, so I always try to can at least a few jars. Then in winter it's such a pleasure to open one up and enjoy a naturally thick vegetable drink while remembering the warm days.

    1. Wash the tomatoes, cut them into quarters, and put them in a blender. They won't all fit at once, so you'll need to work in batches or use a larger container. 2. Purée the tomatoes with an immersion blender. 3. Pour the tomato purée into a pot. 4. Add the salt and ground black pepper. 5. Set the juice over medium heat and bring it to a boil. 6. Reduce the heat and simmer the juice for 10 minutes. 7. Pour the boiling juice into sterilized bottles (or jars), seal them, and let them cool in a warm spot. The juice can now be stored in a cool place.
