Fresh Tomato Sauce for Pasta
A wonderful way to dress up plain pasta or grains! The recipe is very easy to make. It comes out sweet and tart, and the flavor is simple to fine-tune with sugar, salt, and pepper. Serve the sauce with meat or vegetables, or use it for pizza and spaghetti. It's good for any occasion!

Cooking method
- For this sweet-and-tart tomato sauce, start with ripe tomatoes and peel them. To do that, score a shallow cross in the bottom of each tomato and pour boiling water over them. It's best to peel the pepper too — I use a vegetable peeler. Cut the peeled tomatoes into quarters and scoop out the seeds with a teaspoon. Put the tomatoes and pepper in a blender (you can add a few tablespoons of oil if you like), season with a little salt, and blend until smooth. Pour the purée into a saucepan and set it over the heat to reduce. Once it comes to a boil, add the chopped garlic, salt, pepper, sugar, and your favorite herbs (I use basil, oregano, chopped bay leaf, and dill, plus a little sweet paprika) and simmer until it reaches the consistency you want. I cooked mine for about 15 minutes. The sauce is ready. Enjoy!
