- In Cuba, rum is the locals' drink of choice among all the spirits. Havana Club is the most famous brand, with three varieties that differ by aging: gold, white, and old. The Cuban favorite, though, is Añejo. Cubans use rum as the base for all sorts of cocktails. Here's one to try: hot rum with clove butter. Put the cloves and a little of the sugar in a mortar and grind the mixture as fine as you can. In a deep bowl, let the butter soften at room temperature, then beat it with a mixer until fluffy. Still beating, add the clove-sugar mixture and the rest of the sugar, then pour in the honey in a thin stream. Everything from here on should be done right at the table, in front of your guests. Pour about 1½ oz (40 ml) of rum into clear, heat-resistant glasses and top with boiling water, leaving about 1 inch (3 cm) from the rim. Drop a generous tablespoon of the clove butter into each glass and serve immediately. Besides cloves, you can also flavor the butter with cardamom, cinnamon, or nutmeg. It looks especially striking to stand a cinnamon stick in the quickly melting butter — guests can then use it to stir.
