Cold Kefir Beet Soup with Basil and Cucumber

  • Summer is finally here at last — soon it'll be time for vacation, swimming, sunbathing, and relaxing. But for now it's hot, and the endless dieting is on, because you want to look your best on that trip. I won't go on about diets, though; I'd rather share the secret of a very light, fresh soup: Lithuanian cold kefir beet soup. It's a treasure trove of vitamins, super refreshing in the heat, and of course a perfect recipe if you're watching your weight. Take young beets with their tops, wash them, and put them on to boil in about a quart of salted water. Once the beets are tender, cut them into thin strips and chop the tops too. Into the cooled beet cooking water, add the chopped fresh cucumbers and herbs, then the beets and their tops. Boil the eggs. Cut the whites into small pieces, and mash the yolks and stir them into the soup until well blended. Add a cup of kefir. Taste for salt, add more if needed, and ladle into bowls. Top each bowl with the chopped egg white and a dollop of sour cream. Garnish the cold soup with egg quarters. It's a bit like the familiar hot borscht we all know, only much fresher, lighter, and more aromatic — real summer food. Enjoy!
