Guriev-Style Semolina Porridge with Walnuts
A wholesome, nourishing porridge for grown-ups and kids alike. My family loves having porridge for breakfast — a healthy habit we picked up after my husband had to go on a strict diet. The need to watch his diet passed long ago, but the morning-porridge routine stuck, and we've raised our kids on it, too. Of course, I have to get creative: I often come up with recipes myself, swap ingredients, and add my own touches. Here's one of them.

Shell the nuts and boil them for about 20 minutes.

Drain them and crush them with a little milk.

In a separate saucepan, heat most of the cream over low heat. As soon as a golden skin starts to form, lift it off and set it on a plate. Once you've removed all the skin, pour the semolina into the cream and cook a thin porridge.

When the porridge is ready, stir in the crushed nuts and sugar and mix well.

Here's how I serve it: spoon a layer of porridge into the middle of the plate, then a layer of the reserved cream skins, then more porridge, and so on. Finish with a sprinkle of sugar and breadcrumbs on top. For the kids, I decorate the porridge with fruit and jam.
