- I came across this lovely recipe ages ago in a women's magazine, and it's perfect for a festive table. To make it, prep your ingredients ahead: cook the chicken breasts and hard-boil the eggs. Pull the chicken off the bone and cut it into thin strips; grate the eggs on the coarse side of a box grater and add a little salt. Slice the cheese thinly or grate it coarsely. If the Korean-style carrots are long, cut them into pieces no longer than 1½ inches (4 cm). Shell the pistachios, grind them in a blender, then wrap them in a paper towel and set aside for later. For the dressing, mix sour cream and mayonnaise in whatever ratio you like. Layer the salad in this order: chicken, carrots, cheese, eggs, and so on, spreading dressing over each layer. The salad must chill in the refrigerator at least 6 hours before serving — ideally a full day. Sprinkle the ground pistachios on just before serving, and garnish with extra carrots and fresh herbs. I think any food lover will enjoy this one — it comes out genuinely tasty, delicate, and a little out of the ordinary.
