"Bride" Layered Salad with Mushrooms, Mayo, and Smoked Chicken

This wonderfully tender salad will win over your guests! "Bride" salad with mushrooms, mayo, and smoked chicken can be made as individual portions or as one big dish. I made a single large one — it looks gorgeous on the table. The cooking time doesn't include boiling the vegetables. Button mushrooms (cremini work too) are the best choice here.

    How do you make "Bride" salad with mushrooms, mayo, and smoked chicken? Gather the ingredients. I keep my mayonnaise in a squeeze bottle — very handy for layered salads.

    First, put the eggs on to boil — 10 minutes after the water comes to a boil; we want them hard-boiled.

    Also put the potatoes on to boil in their skins, adding a little salt once the water boils.

    Then wash the mushrooms well and slice them.

    Put the mushrooms in a dry skillet and cook them without oil at first, until all their liquid cooks off.

    Once there's no liquid left, add the vegetable oil and fry the mushrooms until done.

    Finely dice the onion, add it to the mushrooms, and fry everything until done. Salt lightly.

    The potatoes are boiled, cooled, and peeled; the eggs are peeled; the mushrooms are fried — time to assemble the salad. I made one large portion: I set a forming ring on a plate, and for the first layer added potatoes grated on a coarse grater.

    Pipe a crosshatch of mayonnaise on top.

    The second layer is diced smoked chicken.

    Spread the chicken over the potatoes and add a crosshatch of mayonnaise on top. Adjust the amount of mayo to your taste — use more or less, or just spread it in an even layer.

    The third layer is the egg yolks, grated on a fine grater — no mayo needed on these.

    Spread a layer of the fried mushrooms and onion over the yolks.

    And the top layer is the egg whites, grated on a fine grater. They look so fluffy and delicate — just like a bride! The salad is ready. Lift off the forming ring and refrigerate for a couple of hours so the flavors meld. The trick with layered salads is to let them soak well — if you have time, it's best to make them the day before the event, say the evening before.
