Salad with Strawberries and Arugula

A dessert salad with a very interesting, unusual flavor. "Red and Black" series — No. 6. The taste of this salad simply amazed me — everything comes together so harmoniously. I especially loved how the strawberry syrup played with the rest of the dressing — I'd worried it wouldn't agree with the balsamic and olive oil and would spoil the flavor. The worry was unfounded, and it turned out to be a wonderful spring-summer salad that I'll be making regularly from now on. It's a sweet dessert salad, lovely with a white or rosé semi-sweet wine.

    Get the ingredients ready. Take the mozzarella balls out of the brine and pat them dry. Wash and dry the arugula. Cut large leaves in half.

    The dressing. Combine the balsamic glaze with the olive oil and stir.

    Wash and dry the strawberries and trim off the stems. Quarter the large berries and halve the medium ones.

    Arrange the arugula leaves on a platter. Scatter the mozzarella balls and strawberries on top.

    Sprinkle the salad with white sesame seeds. If you have pine nuts, you can use them instead.

    Drizzle the salad with the olive-balsamic dressing, then with liquid honey (if your honey has crystallized, melt it first), and finally with strawberry syrup.

  • This salad recipe came together on the fly. I'd been flipping through various magazines for a while and kept coming across a salad with strawberries and arugula. It always looked interesting and beautiful — no wonder, since red berries on green arugula look stunning. So when I happened to have some fresh strawberries on hand, I decided to make the idea a reality. But, as always, I did everything my own way — which is how the balsamic, strawberry syrup, and sesame got added. At first I wanted pine nuts instead of sesame, but at the last minute I swapped them out. With pine nuts it should be just as delicious.
