Korean-Style Wood Ear Mushrooms with Beef and Glass Noodles

Make restaurant-worthy dishes at home! Korean-style wood ear mushrooms work in all kinds of dishes; here they're cooked with glass noodles and beef. You can use fresh or dried mushrooms — if fresh, use more, about 200 grams.

    1. Rinse the beef, cut it into thin strips, and put it in a bowl. Add soy sauce, sesame oil, sugar, and garlic powder, stir, and leave it to marinate. 2. Cook the glass noodles per the package directions until they turn translucent. Drain them in a colander, rinse under running water, and return them to the pan. Toss them with soy sauce and sesame oil and a sprinkle of sugar. 3. Quickly blanch the spinach in boiling salted water for 1 minute, then lift it out, rinse under cold water, and squeeze it dry. 4. Put the dried wood ear mushrooms in a bowl of warm water and let them soak for 10 minutes, then cut them into strips. 5. Peel the carrot and onion; grate the carrot on a julienne (Korean-carrot) grater and slice the onion into thin half-moons. 6. Sauté the prepared ingredients separately in vegetable oil: first the onion until translucent, then the carrot until soft, the mushrooms for 3 minutes, and the beef until fully cooked. 7. Combine the sautéed vegetables, beef, and mushrooms; add the noodles and spinach and toss together. Taste and add more soy sauce and sugar if needed. Divide among plates and sprinkle with sesame seeds. Enjoy!
