    1. To make this dessert, first brew some strong coffee — use 2–3 tablespoons of ground coffee per cup of water. Once it cools, stir in the liqueur or almond extract. 2. Separate the eggs, putting the whites and yolks in different bowls. The bowl for the whites needs to be spotlessly clean and dry. Whip the whites to stiff peaks, then beat in half of the powdered sugar. 3. In the other bowl, beat the yolks with the remaining powdered sugar, then add the mascarpone and mix. Fold in the whipped whites a little at a time, very gently, so the mixture doesn't deflate. 4. Dip the ladyfingers in the spiked coffee and arrange them in a dish. Spread cream over them, and keep alternating layers this way. Dust the top layer of cream with cocoa through a fine sieve. Cover with plastic wrap and refrigerate. Give the tiramisu 3–4 hours to soak up the cream and coffee — or chill it overnight for even better results. Enjoy!
