Tkemali Plum Adjika
A delicious, wholesome adjika you can put up for winter right at home. This all-natural plum adjika is a perfect stand-in for store-bought sauces. Make it fiery or keep it mellow, depending on what you like — either way, it's moderately spicy and wonderfully fragrant, an ideal partner for meat and fish.

- Rinse the plums, pit them, and let them sit for 2 hours until they release their juices. 2. Peel the garlic cloves and the hot pepper. 3. Transfer the plums to a pot and set over low heat for 20 minutes. Once the fruit has cooled slightly, grind it together with the garlic and pepper in a meat grinder. Finely chop the herbs and add them to the pot. Stir in the salt, sugar, and dried tkemali spices. Simmer for another 40–50 minutes, stirring now and then. Finally, pour in the vinegar and ladle the adjika into sterilized jars.
