Meatless Borscht with Beans and Cabbage

Add beans to your borscht for a delicious, filling bowl of soup! I live in Ukraine, and our signature dish is, of course, borscht. I love it dearly. What's fascinating is that every cook has her own way of making borscht with beans, each one a little different from mine—and every version is delicious.

  • I always make this with beans when there's no meat. Soak them overnight so they plump up, then put them on the heat and cook until tender. I add the potatoes to the same pot. Meanwhile, I make the sautéed base: finely chop the onion, coarsely grate the carrot and beets, and fry it all in sunflower oil. At the end I stir in the tomato paste and sour cream. I like to add a clove of garlic too. If you're making a fully meatless (vegan) borscht, leave out the sour cream. Add a splash of water and let it simmer another three minutes or so. Only once the potatoes are cooked do I add the shredded cabbage, followed by the sautéed base. Don't forget to salt and pepper it. At the very end I finish it with fresh herbs—or set them out separately at the table so everyone can add as much as they like.
