Pasta with Chard

A delicious side dish—or an appetizing meatless main all on its own. It couldn't be simpler to make, yet it's so tasty that even the meat-free crowd is sure to love it. That said, pasta with chard also makes a wonderful side for meat or fish.

    1. Bring a large pot of water to a boil for the pasta and salt it to taste. 2. While the water heats up, sauté the onion in olive oil in a deep, wide skillet over fairly high heat for about 5 minutes. Add the diced chard stems and cook, covered, until tender. 3. Drop the pasta into the boiling water and cook according to the package directions. Drain the pasta, but reserve 100 ml (about 1/2 cup) of the cooking water. 4. Add the chopped chard leaves to the onion and stems in the skillet and cook, covered, stirring now and then. 5. A few minutes before it's done, add the minced garlic and the herbs lightly mashed with salt and pepper, and cook for a minute. 6. Turn the heat to medium and add the white wine to the vegetables. Stir and cook for a minute. 7. Then add the reserved pasta water, stir, and cook for another 2 minutes. 8. Add the butter to the skillet and stir until it melts into the sauce. 9. Take the sauce off the heat, toss it with the pasta, and add the grated Parmesan. Mix everything together. 10. Serve right away. It works both as a side and as a main. Enjoy every last bite!
