Smoked Chicken Salad with Prunes and Avocado

Tasty, fast, and out of the ordinary—and with the right presentation, gorgeous too! This is my all-time favorite combination! :)) I just love every one of these ingredients. :)))

    1. Rinse the prunes, cover them with boiling water for 10 minutes, drain, pat dry, and cut into cubes. 2. Rinse the avocado, pat dry, peel, remove the pit, and cut into cubes. 3. Hard-boil the eggs, cool, peel, and cut into cubes or thin strips. 4. Rinse the cucumbers, pat dry, and cut into cubes. 5. Chop the pistachios (setting a few chopped ones aside for garnish). Peel the skin off the smoked chicken, pull the meat from the bones, and cut the chicken into cubes. Rinse the parsley, pat dry, and finely chop it (setting a few leaves aside for garnish). In a salad bowl, combine the prunes, chicken, pistachios, parsley, eggs, cucumbers, and avocado, add the mayonnaise, and toss well again. Garnish with the reserved chopped pistachios and parsley leaves. ENJOY!
