"Keeping It Simple" Salad

Quick and easy to make — and just as quick to disappear. Tasty. Great with grilled meat and chicken. You can dress it with mayonnaise or sour cream, and with oil for those watching their weight. Light. Easy to digest. The one catch: it shouldn't sit for more than a day.

Finely shred the cabbage. Cut the tomatoes into small pieces. Mix the Korean-style carrots, cabbage, and tomatoes together (you can add a little of the brine from the Korean carrots). Add salt to taste. You can add fresh herbs, but if you don't have any, it's very tasty without them too.
