Czech soup of dried porcini mushrooms with Kulaid milk

Hearty soup with a delicate sourness, a pleasant smell of dill and poached egg. Czechs compose poems about this soup. The Czech poet Vaclav Danek, who is passionate about cooking, has released a whole collection in which he introduces the reader to Czech cuisine, dedicating an entire poem to the dish. About his hobby, the poet says that first he cooks something, and then writes a verse about it. And kulaida has found her place of honor in this collection. Cooking method

Cooking time: 1 h

1. Soak dried porcini mushrooms in water for an hour. Fresh (400 g) need to be cleaned well.

2. Prepare a base of butter and flour: in a saucepan (preferably with a thick bottom), melt the butter, add the flour and stir well. Stirring constantly, add beef broth (in extreme cases, water), salt, bring to a boil.

3. We put mushrooms and diced potatoes into this base, cook over very low heat for about 40 minutes.

4. Potatoes should be well boiled. Add milk, sour cream, vinegar. Stirring, bring to a boil.

5. In the finished soup, put finely chopped dill.

6. In portions, in each plate, we carefully put a poached egg on the soup. If this does not work out, then a soft-boiled egg, incised or broken so that the contents of the liquid yolk slightly leak out into the soup, is also quite suitable.
