No-Sterilize Pickled Cucumbers with Dill, Horseradish, and Currants

  • For crisp cucumbers, soak them in cold water for at least 6 hours. Once they've soaked, get your canning jars ready. Wash the jars and lids in soapy water. Into the bottom of each quart (1-liter) jar, put one horseradish leaf, one dill umbrella, three garlic cloves, four black peppercorns, and one bay leaf. Pack the cucumbers into the jars, alternating them with the currants — you'll want about a cup of currants for each quart jar of cucumbers. Fill each jar up to the neck. Add two tablespoons of salt (leveled, not heaping), one tablespoon of sugar (leveled), and one teaspoon of citric acid to each jar. Bring two quarts (2 liters) of water to a boil. Pour the water, straight off the stove, over the contents of the jars all the way to the rim, cover with the lids, and let stand for 20 minutes. Drain the brine from each jar back into a pot and bring it to a boil, then pour it back into the jars. Now you can seal the lids. Store the cucumbers in a dark place at room temperature.
