- A coworker of mine tipped me off to this recipe for a wonderful salad, simply called a layered lingonberry salad. First she brought this little marvel to work and treated us all to it, and afterward we all begged her for the recipe. The vegetables and eggs need to be boiled ahead of time. Use one large beet and medium carrots. Grate the yolks and whites separately on a fine grater. Grate the carrots, beet, and cheese on a fine grater too. Put the walnuts through a meat grinder or chop them very finely with a knife. If you'd like to add garlic, crush a few cloves and mix them into the mayonnaise. Add salt if it needs it. Take a clear glass salad bowl and layer the salad in this order: 1) beet 2) yolks 3) carrots 4) whites 5) cheese 6) walnuts. Spread a thin layer of mayonnaise over each layer — except the top walnut layer, which you leave as is. The salad should sit overnight; only then will it be delicious. Just before serving, scatter the lingonberries over the walnuts on top.
