Vegetarian Rassolnik (Pickle Soup) with Rice

A wonderful first course — tasty and fresh! Highly recommended! Rassolnik is a Russian soup built on brined cucumbers, various root vegetables, and cucumber brine. These days it's common to add root vegetables and a grain (pearl barley, rice, or buckwheat) alongside the cucumbers. Here's a rice rassolnik recipe rooted in traditional home cooking.

  • Cut the carrots, celery root, and onion into small cubes, and the potatoes into batons. Then dice the cucumbers and gently cook them in a saucepan with a little water until half-done.
  • Boil the rice until nearly done. Sauté all the vegetables except the cucumbers. Bring the vegetable broth to a boil and add the potatoes. Once the potatoes are almost cooked, add the boiled rice, the bay leaf, and the sautéed vegetables, and cook until everything is tender.
  • At the very end, add the cucumbers (along with the water they cooked in) and salt to taste. The soup is ready! Serve the rassolnik with rice. Enjoy!
