  • So, boil the broccoli in salted water — just 5 minutes — and set it aside to cool. Take the mushrooms and chop them finely. I use button mushrooms, but really any pickled mushrooms will work. I'd recommend lightly pickled ones, with a squeeze of lemon juice over them (so there's less vinegar bite). Salt and pepper the mushrooms and set them aside. Cut the ham and cucumber into strips. Back to the broccoli: break it into florets, cutting them down if the pieces feel too big. Now mix everything together — ham, cucumber, broccoli, and mushrooms. Dress with mayonnaise strictly right before serving. Enjoy!
