Norwegian Cream Soup with Shrimp
This gentle wonder will warm you up on cold days! This summer my husband and I were lucky enough to take a sightseeing tour through the Scandinavian countries. We loved absolutely everything about the trip, but one excursion stood out most of all — the one where we learned to make a traditional Norwegian dish: Norwegian cream soup. It calls for a lot of ingredients, but its magnificent, one-of-a-kind flavor is well worth it. So here's this elaborate recipe to share with you.

- To start, melt part of the butter in a small saucepan and stir in the flour. Stirring constantly, cook this roux for 2 minutes. Then gradually add the broth you prepared in advance. Still stirring constantly, let it simmer for 5–10 minutes. Now melt the rest of the butter and sauté the potatoes, carrot, and leek for about 7–10 minutes. Add the tomatoes and cook for about 5 minutes more. Then add the fish, mussels, shrimp, and cream, and cook another 5–7 minutes. At the end, season with parsley, salt, and pepper to taste. Serve the soup hot, garnished with a dollop of sour cream and a little caviar. Enjoy!
