This very original dish of Estonian cuisine is called "Bread soup with apples". To be honest, at first you won't immediately understand which category it belongs to: whether it's soup, or it's some kind of compote. Because the food turns out to be sweet, it is better to serve it as a dessert or use it as breakfast, dinner. They can also have lunch, of course, especially for those who, in principle, like sweets. This recipe includes bread, but which one is not specified. I tried to make both white and black. The taste of the whole dish changes at the same time, so try it yourself. I personally liked the soup with rye bread, and my homemade – with wheat.
Soak dried apples and stale bread. Peel the fresh apples and cut them finely. In a saucepan with a small amount of water, put the soaked apples and bread and boil until ready. At the end, we rub through a sieve, turning everything into a homogeneous mass. Add honey (it is better to try it, so as not to over-sweeten) or sugar. Mix well and serve, garnished with whipped cream.
