This unusual food is called okroshka "hare" not because it is made from a hare, but because it is based on favorite "hare" products: carrots and cabbage. This dish of Russian cuisine is designed primarily for fans of vegetarianism. It consists entirely of vegetables, is cooked very quickly, ideal for lean days. Another feature of this okroshka is that the products for it are not boiled: we take raw or salted vegetables. This adds value to the dish, since such food contains a lot more vitamins. The okroshka recipe is suitable for baby food (for children of kindergarten age and older).
Raw fresh carrots can be grated on a coarse grater or cut into small cubes. Personally, I rub it, it tastes so much better. We cut the raw kohlrabi into cubes, chop the fresh cabbage into small strips, sauerkraut, if necessary, additionally grind. Mix all the chopped vegetables and pour them with cold kvass. Salt. Green onions can be added to the whole soup if you are sure that it will be eaten quickly enough. Or add it to each plate along with a spoonful of sour cream.
